Descriptions
This simple, fun, and vegan recipe is perfect for summer BBQs. The mini zucchinis are marinated in a lemony, slightly spicy sauce and then grilled to perfection.
They are served on skewers, making them easy to enjoy as zucchini lollipops. With just a few ingredients and minimal prep time, this dish is ideal for casual gatherings and a great way to add some fun to your menu.
Directions
1- Prepare the zucchini: Cut 6 mini zucchinis into 2-inch pieces and place them in a shallow dish.
2- Make the marinade: In a small bowl, combine 1/4 cup of olive oil, the zest and juice of 1 lemon, 1 teaspoon of Espelette pepper, 1 tablespoon of agave syrup, and 1 tablespoon of oregano.
3- Marinate: Pour the marinade over the zucchini pieces. Let them marinate for at least 4 hours, turning occasionally.
4- Grill the zucchini: Thread the marinated zucchini pieces onto skewers. Grill them on a hot barbecue until slightly charred and tender.
5- Serve: Drizzle the remaining marinade over the grilled zucchini or use it as a dipping sauce.
Note's
- If you can’t find mini zucchinis, regular zucchinis will work just as well, just cut them into 2-inch pieces.
- You can replace Espelette pepper with cayenne pepper or red pepper flakes for a spicier kick.
- If you prefer, you can bake the zucchini in the oven at 400°F for about 10-15 minutes instead of grilling.
