Winter Salad with Roasted Jerusalem Artichokes(1)

Descriptions

This vegetarian winter salad is packed with vitamins and nutrients, featuring fresh winter vegetables paired with roasted and lemony Jerusalem artichokes.

Served over quinoa and topped with a little mayonnaise, this dish is both hearty and refreshing, making it an ideal meal for the colder months.

Directions

1- Preheat the oven to 400°F.

2- Place the Jerusalem artichokes in a pot of water and bring to a boil. Cook for 10-15 minutes, until just tender.

3- Drain and rinse with cold water. Pat dry, then place the Jerusalem artichokes on a baking sheet. Lightly smash them and drizzle with olive oil, lemon juice, thyme, salt, and pepper. Roast for 20 minutes until crispy.

4- While the Jerusalem artichokes are roasting, prepare the other salad ingredients. In a large bowl, combine the shredded red cabbage, carrots, sliced pear, and raisins. Add olive oil, apple cider vinegar, and a pinch of salt. Toss well and set aside.

5- Cook the quinoa according to package instructions.

6- To serve, layer the quinoa with the roasted Jerusalem artichokes and prepared vegetables. Drizzle with a little mayonnaise for extra richness.

Note's

  • You can swap the quinoa for another grain like farro or brown rice for a different texture.
  • For a vegan option, replace the mayonnaise with a vegan-friendly alternative.
  • To enhance the flavor of the Jerusalem artichokes, try adding a sprinkle of smoked paprika before roasting.
