Directions
1- Preheat your oven to 350°F.
2- In a small bowl, whisk together the vinaigrette ingredients: olive oil, water, and chopped parsley, with a pinch of salt.
3- Brush the cabbage quarters generously with the vinaigrette, saving the remaining vinaigrette for later.
4- Place the cabbage in a roasting pan and bake for about 30 minutes, basting occasionally with water, until tender and lightly browned.
5- While the cabbage roasts, boil or steam the sweet potato cubes until tender (about 15-20 minutes).
6- Mash the cooked sweet potatoes with salt and pepper to taste.
7- Serve the roasted cabbage alongside the mashed sweet potatoes, drizzling the remaining vinaigrette over the top.
Note's
- For extra flavor, you can add a pinch of smoked paprika to the sweet potatoes.
- If you want a bit of crunch, roast the cabbage at a higher temperature (400°F) for the last 5 minutes.
