Descriptions
Pommes dauphine are a delightful French side dish, combining mashed potatoes and choux pastry for a crispy exterior and soft, fluffy interior. Traditionally fried, this modern version skips the oil and uses an airfryer to make a lighter, healthier option. It’s quick to prepare and perfect for a family meal, making it ideal for busy weeknights. Serve with steak or other meats, and watch your kids ask for seconds!
Directions
1- Cook 6-8 medium potatoes (Yukon Gold or russet) with the skins on, steaming them until tender.
2- Peel the potatoes and mash them in a large bowl.
3- Add 2 tablespoons of olive oil, 125 ml (½ cup) of cornstarch, and a pinch of salt to the mashed potatoes. Mix until a smooth, slightly sticky dough forms.
4- Shape the dough into small balls (about the size of a walnut).
5- Lightly brush the tops of the balls with a bit of oil using a pastry brush.
6- Preheat your airfryer to 360°F (180°C) and cook the pommes dauphine for about 20 minutes, turning them halfway through for even browning.
7- Remove from the airfryer when golden and crisp on the outside. Serve hot!
Note's
- For a fluffier texture, make sure to mash the potatoes while they are still warm.
- If you prefer, you can season the dough with additional spices like garlic powder or paprika for added flavor.
- These pommes dauphine can be stored in the refrigerator and reheated in the airfryer for a few minutes to regain their crispiness.
