Directions

1- Prepare your workstation:

Arrange all ingredients and cooking equipment. (5 min)

2- Prepare the court-bouillon:

  • Peel, wash, and slice the carrots and onions.
  • Wash and reserve the parsley.
  • Create a bouquet garni. (15 min)

3- Cook the court-bouillon:

  • In a large pot, boil 2-3 quarts of water with the carrots, parsley, and bouquet garni. Season with coarse salt.
  • Add the onions after 10 minutes of boiling and a few peppercorns toward the end. (15 min)

4- Prepare the trout:

  • Trim and gut the trout. Gently remove the gills and clean the blood clots under cold running water.
  • Rinse the trout and let them soak in ice water for a few minutes. (20 min)

5- Poach the trout:

Place the trout diagonally in a fish pan. Pour half of the cooled court-bouillon over the fish and bring to a gentle simmer. Cook without boiling for 8-10 minutes. (5 min)

6- Prepare the beurre blanc:

  • Finely chop the shallots.
  • In a small saucepan, combine shallots, white wine, and white wine vinegar, reducing the mixture until almost dry.
  • Gradually whisk in small cubes of butter over low heat until smooth and creamy. Season with salt and a pinch of Cayenne pepper. Keep the beurre blanc warm over a water bath. (15 min)

7- Check the trout’s doneness:

The flesh should be opaque and easily flake with a fork. (2 min)

8- Plate the dish:

  • Carefully drain the trout and place them on a serving dish. Pour the remaining hot court-bouillon over the fish, arranging the aromatic vegetables decoratively.
  • Garnish with parsley and the bouquet garni. Serve with the beurre blanc in a sauceboat. (8 min)

Note's

  • To enhance the richness of the beurre blanc, you can add a little cream to the reduction before incorporating the butter.
  • For a lighter side, serve with steamed potatoes or buttered vegetables.
  • Make sure to poach the trout gently to avoid overcooking and drying out the fish.
