Descriptions
Millefeuille is a classic French pastry known for its delicate, flaky puff pastry layers, filled with creamy vanilla custard and topped with a glossy icing.
This dessert is elegant yet satisfying, making it a staple in French patisseries. The balance of crisp pastry and smooth cream offers a delightful contrast of textures.
Directions
1- Prepare the puff pastry: Preheat the oven to 400°F. Roll out the puff pastry and cut 18 identical rectangles. Place them on a baking sheet lined with parchment paper. Brush with water and prick with a fork. Place another sheet of parchment on top and set a baking tray on it to prevent the pastry from rising too much. Bake for 20 minutes, then let cool.
2- Make the vanilla pastry cream: In a saucepan, heat whole milk (1 3/4 cups) with a split vanilla bean until simmering. Remove from heat and let steep. Meanwhile, whisk together 3 egg yolks, 1/3 cup sugar, 1/3 cup cornstarch, and 1/4 cup flour in a bowl. Gradually whisk the warm milk into the egg mixture. Return the mixture to the saucepan and cook over low heat until it thickens. Remove from heat, stir in softened gelatin (1 sheet), and let cool.
3- Whip the cream: Whip 3/4 cup of heavy cream until soft peaks form, then fold it into the cooled pastry cream. Transfer the cream to a piping bag.
4- Assemble the millefeuille: Pipe a layer of cream onto 6 pastry rectangles. Add a second layer of pastry and pipe more cream. Top with a final layer of pastry.
5- Prepare the glaze: Mix 1 cup powdered sugar, 1 egg white, and 1 tablespoon lemon juice to create a smooth icing. Set aside 2 tablespoons of the mixture and mix with cocoa powder (2 teaspoons). Spread the white icing on top of each millefeuille, then use the chocolate mixture to draw decorative lines.
6- Chill and serve: Refrigerate the assembled millefeuilles for 30 minutes before serving to allow the flavors to meld.
Note's
- Tip for puff pastry: If you’re making your puff pastry from scratch, be patient with the folding and resting process to ensure a light, flaky result. You can sprinkle powdered sugar on the pastry before baking for added caramelization.
- For a uniform size: Use a ruler to cut the puff pastry evenly. For a professional finish, use a serrated knife to slice through the layers after assembly.
- Flavor variations: You can flavor the custard with rum, orange blossom water, or a splash of cointreau for a unique twist.
