LÉGUMES À LA GRECQUE(1)

Descriptions

Légumes à la Grecque is a traditional Mediterranean preparation where various vegetables such as mushrooms, artichokes, cauliflower, or zucchini are cooked in an aromatic broth of olive oil, lemon juice, and white wine.

The vegetables are simmered quickly, absorbing the fragrant flavors of garlic, herbs, and spices.

Once cooked, they are served cold, coated with their reduced cooking liquid, which intensifies the flavors, making this dish perfect for warm weather or as a refreshing side.

Directions

1- Set up the workspace (5 min)

Gather all your ingredients, cooking tools, and serving dishes.

2- Prepare the vegetables (25 min)

  • Peel and wash the onions, finely chop them or use small pearl onions.
  • Create a bouquet garni with your herbs.
  • Peel and remove the germ from garlic cloves.
  • Juice the lemons and reserve the juice in a small bowl.
  • Prepare a spice sachet by wrapping most of the coriander seeds and black peppercorns in cheesecloth, along with the garlic, and tie securely. This will prevent seeds from ending up in the dish.

Depending on the vegetables you choose:

Mushrooms: Clean and slice them, keeping the caps whole if desired.

Artichokes: Peel, trim, and slice the artichoke hearts.

Zucchini: Wash, cut into rounds, and shape if needed.

Cauliflower: Cut into small florets and wash thoroughly.

3- Cook the vegetables (10-25 min)

  • Sauté onions in olive oil until soft and translucent.
  • Add the vegetables: mushrooms, artichokes, zucchini, or cauliflower, depending on your choice.
  • Pour in the lemon juice, white wine, bouquet garni, and spice sachet.
  • Season with salt and add water if needed (especially for artichokes and cauliflower).

Cover and cook:

Mushrooms: 5-6 minutes

Zucchini: 10-12 minutes

Artichokes/Cauliflower: 20-25 minutes

  • Remove the lid towards the end to reduce any excess liquid and ensure the vegetables are tender but not mushy. Remove the bouquet garni and spice sachet.
  • Adjust the seasoning to taste.

4- Plate the vegetables (5 min)

  • Toss the vegetables gently in their cooking juices until they shine.
  • Serve them in small dishes and drizzle with the reduced sauce.
  • For mushrooms, you can decorate with the reserved caps or garnish with lemon slices.

Note's

  • This recipe allows for flexibility with vegetables: leeks, celery, or even okra can be used.
  • You can add a touch of tomato or saffron for more color and flavor.
  • The dish is best served cold but can be enjoyed warm depending on your preference.
