Descriptions
The invisible apple cake gets its name from the way the thin slices of apples seem to “disappear” into the batter after baking, creating a moist and tender cake. This recipe highlights the sweetness of apples, enhanced by a hint of rum and a sprinkle of powdered sugar.
It’s an easy-to-make dessert, perfect for fall or any apple season. Pair it with whipped cream for a delightful treat.
Directions
1- Preheat your oven to 400°F (200°C).
2- In a mixing bowl, combine 2 eggs with ⅓ cup (70 g) of brown sugar. Stir in ⅔ cup (80 g) of flour, 1 tsp of baking powder, and 2 tbsp melted butter.
3- Slowly mix in ⅓ cup (2.5 oz) of whole milk and 2 tbsp of rum.
4- Peel 6 golden apples, core, and slice them thinly using a mandoline.
5- Fold the apple slices into the batter, making sure they are well coated.
6- Butter an 8-inch (20 cm) round cake pan or an equivalent-sized square pan.
7- Pour the apple batter into the pan and smooth the surface.
8- Bake for 35-40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
9- Let cool slightly before unmolding, then dust with powdered sugar.
10- Serve warm with whipped cream or crème fraîche.
Note's
- For a variation, you can substitute half the apples with pears and add a pinch of cinnamon to the milk.
- If you don’t have rum, you can leave it out or replace it with vanilla extract for added flavor.
- This cake pairs beautifully with caramel sauce for an extra indulgent treat.
