Descriptions
This simple yet creative vegetarian dish features celeriac fries seasoned in a tangy marinade, roasted to perfection, and paired with baked eggs for a comforting and nutritious meal.
With minimal ingredients and gluten-free, it’s a great option for a quick lunch or dinner.
Directions
1- Preheat the oven to 400°F.
2- In a bowl, mix together the ingredients for the marinade: 2 tablespoons of olive oil, 1 tablespoon of Sriracha (or more to taste), 2 crushed garlic cloves, and 1 tablespoon of lime juice. Season with salt and pepper.
3- Toss the celeriac fries in half of the marinade to coat them well. Arrange the fries on a baking sheet and roast for about 20 minutes, stirring halfway through, until they are tender and crispy.
4- Make small wells in the fries and crack an egg into each well. Bake for another 8 minutes, or until the egg whites are set but the yolks remain soft.
5- Drizzle with the remaining marinade and sprinkle with sesame seeds before serving.
Note's
- Make sure to cut the celeriac fries no larger than 1/2 inch thick for the perfect balance of crispy outside and tender inside.
- You can adjust the spiciness of the marinade by adding more or less sriracha.
- Serve with a side of salad or dipping sauce for extra flavor.
