Descriptions

Baked eggplants are a simple and healthy dish perfect for a light meal. The eggplants are cut in half, scored, and then baked with olive oil and Herbes de Provence for a flavorful, aromatic touch.

The soft and creamy eggplant flesh can be scooped out with a spoon and enjoyed as is or paired with other dishes. This recipe is a great option for a low-calorie, satisfying meal.

Directions

1- Preheat your oven to 400°F (200°C).

2- Cut the eggplants in half lengthwise without peeling them. Score the flesh with a knife to create a diamond pattern.

3- Brush each half with 1/2 tablespoon of olive oil.

4- Season with salt, pepper, and Herbes de Provence to taste.

5- Place the eggplants on a baking dish and bake for about 35 minutes, or until the flesh becomes tender.

6- Serve the eggplants warm and enjoy by scooping out the flesh with a spoon.
